A time for rest and recovery. The harvest is over, and we continue drip irrigation as we prepare for pruning.

The veraison phase begins, as red grapes change color. The story of wine unfolds, seeking the perfect ripeness in the fruit.

We analyze and study the delicate balance of sugars, skin maturity, and polyphenolic composition—key factors in determining the precise moment for harvest. Dreams and expectations fill the air.
